Bring New Life to Last Night’s Leftover Chicken

Paleo Chicken Tacos

Ever have leftover chicken and didn’t know how to make it seem like a new meal? Well chicken tacos is always a hit in our house and I don’t hear “Chicken again?”. And the best thing is everyone makes their own to their own tastes.

Unfortunately, packaged taco seasoning is very high in sodium and often has ingredients that are toxic like MSG, soybean oil, and preservatives. But, who cares, because taco seasoning is so easy to make at home, and many people have the ingredients in their home all the time. The recipe below is a basic taco seasoning recipe that can be used on beef or pork, too.

Taco Seasoning Recipe

Ingredients:
1 T chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp dried oregano
1/2 tsp paprika
1 1/2 tsp ground cumin
1/2 tsp sea salt
1 tsp black pepper
Optional: 1/2 tsp (or more) cayenne pepper to bring the heat!

I usually use 1 1/2 T per lb of meat. This can be made in bulk and stored in a glass jar with other spices.

Ingredients:
1 T extra virgin olive oil
meat from three cooked chicken breasts
1 to 2 T taco seasoning
1/2 cup plain tomato sauce
1/2 cup water
Diced tomatoes
Romaine lettuce
sliced olives
homemade quacamole

Optional Ingredients:
shredded cheese
black beans
salsa
Taco shells
soft taco wraps
gluten free wraps

Directions:
Shred the meat so it is in bite size pieces. Heat the oil on medium in a big frying pan. Saute the chicken to warm it up a bit, then add the water, tomato sauce, and 1 T taco seasoning. Stir frequently for about 10 minutes, until everything is warm and coated with the flavorful sauce. Add more taco seasoning to taste.

While the meat is cooking, dice tomatoes, shred lettuce, and slice olives. Place all fixings in separate dishes. To make Paleo Tacos, I use the lettuce leafs whole & wrap the rest of the ingredients.
